Jambalaya

Jambalaya

Serves 6

8oz smoked sausage, sliced

2 teaspoons olive oil or butter

1 chopped onion

1 chopped bell pepper

1 chopped stalk celery

2 minced garlic cloves

salt and pepper to taste

2 cups rice

4 cups chicken stock

1 - 8oz can tomato sauce

1 - 14oz can diced tomatoes

2 bay leaves

2 teaspoons Worcestershire sauce

1 teaspoon hot sauce

1 teaspoon thyme

2 cooked, diced chicken breasts OR 3 cooked, diced chicken thighs

Brown the sausage in a Dutch oven or big heavy-bottomed pot. Remove the sausage, leaving in the rendered fat. Set sausage aside. Add the oil or butter to the pot. Saute onion, pepper, and celery until onion is translucent. Add garlic and cook 30-60 more seconds. Season with salt and pepper. Add the remaining ingrediants plus the reserved sausage. Stir to combine well. Taste to ensure proper seasoning. Bring to boil. Reduce to simmer. Cover. Cook 20 minutes, no peeking. Don't forget to remove your bay leaves before enjoying!

Hungry Here!!! Thanks for the recipe that sounds wonderful. If I had the sausage I would throw it all in a pot right now...UMMMM

That is a tasty treat there. I need a vacation down South. I thought that dish had okra?
