well, i had prime rib with mac and cheese mashed potatoes, corn.  two kinds of melon and fresh strawberries and real whipped cream.... two pieces of carrot cake,  chocolate brownies and several things that you stick in a chocolate fountain including fresh strawberries.

 

and several pieces of shrimp....

 

I'm stuffed

Prime Rib???? :emot-drool: My favorite.

Tonight we had a pork roast, done low and slow in the crockpot, Baked Yam's, Brussell Sprout's and Applesauce...YUMMMM!!

tonight we made

Kale & Chorizo Soup

 

3 Medium potato's....Cut into bite size pieces.

1 Large Onion..Diced

1 28oz can diced tomato's

2 15oz can's cannellini  bean's

2-4 cup size low sodium boxes of beef stock

1 tablespoon of diced Garlic

1 package of uncooked  Chorizo Sausage..casing's removed and cut into bite size pieces.

1 large bunch of Kale or 1 big bag of frozen Kale..if using "bunch Kale, wash it and then strip off the leaves from the stalk's and cut it into bite size pieces.

 

Direction's: In a large dutch oven or soup pot, pour in about 2 Tablespoons of Olive Oil,  once it's hot , put in the Potato's and onions, let this cook for about 10 minutes stirring a few times,

 

if it starts to stick add a little of the stock, let it continue to cook a few more minutes,then add the Garlic, Tomatoes and the rest of the stock, bring this up to a rolling boil,once boiling add the Chorizo sausage, let it continue to cook a few more minutes, stirring every few minutes to prevent sticking,

 

This only takes about 20-25 minutes,then add the Kale, turn down the heat to medium and with the lid on the pot let it cook another 10-15 minutes.

Then enjoy!!

 

** Ooo Opps after you add the tomatoes and GaRLIC , ADD THE BEAN;S AS WELL..lol

My Daughter's and Son's Favorite Birthday Breakfast is  "STUFFED FRENCH TOAST"

 

Recipe

2 pieces of Cinnamon Raisin Bread

Cream Cheese

Eggs

 

Direction's:

 

Beat the egg's( usually about 2-3)

Smear Cream Cheese between Cinnamon Raisin Bread

Dip in Egg

Fry

 

Now you know why they only get it on their birthdays..LOL

But This year I'm gonna surprise them with "Breakfast Quesadillas"

But i'm leaving out the  Jalapeno and the cilantro, this will be replaced with Parsley

and no pico de gallo will be replaced with mild salsa....
