Kung Pao Chicken

Sometimes I just want Asian food for that sharp tang and burst of flavor that explodes in my mouth.  I'm alright after that.

 

In less time than it takes to have some Chinese food delivered, you can make Kung Pao Chicken at home.

 

Kung Pao Chicken
Serves 2

 

Ingredients

1 lb chicken breasts; cubed
4 dried chillies; broken (or 1/4 tsp of red pepper flakes)
3 green onions (scallions); chopped
1/4 cup salted peanuts
2 cloves garlic; minced or thinly sliced
1/2 tsp ginger paste or fresh ginger


MARINADE
1 egg white
1 tsp soy sauce
1 tsp water
1 tsp cornstarch
1/2 tsp salt

SAUCE
6 Tbsp water
2 Tbsp chilli sauce
1 Tbsp soy sauce
2 tsp rice vinegar
2 tsp sugar
1 tsp cornstarch

Prepare the marinade by mixing all the ingredients together.  Add the chicken and marinate for 30 minutes.  Think that 30 minutes means it takes too long to make?  Not at all!  Once you start cooking, have all of your ingredients handy because it goes QUICK!  Get your rice cooking now.

Prepare the sauce by mixing together the sauce ingredients.  (TIP:  I make this sauce for a lot of things, even just to pour over rice, or in a pasta dish.  It's quick and versatile!  Truth?  I double the sauce recipe for this dish because it's always about the sauce and gravy!)

Heat the oil in a wok/skillet on a medium high heat.  Add the garlic, ginger and chillies and stir for a few seconds and then add the chicken.

After 3 minutes, add the green onions and stir fry for another minute.

Add in the sauce and continue cooking for 3 - 5 minutes to thicken the sauce and finish cooking the chicken.

Add in the peanuts and stir fry for 30 seconds and serve.

It's a bit more than a tottle for me to go Krogering from Minnesota.  Sure, you can dump it out of a jar.  Along with all the chemicals and high fructose corn syrup.  Yummmm???  The sauce actually takes maybe two minutes to make... if you're slow.  Try getting the protective plastic off the store bought jar in less time!
