Spicy Italian Sausage Soup

Very simple but hardly for those watching their weight or cholesterol which I do on both accounts however a couple time in the winter is not bad.

Spicy Italian Sausage Soup.

Eight  links of spicy Italian sausage in casing.  Remove casings

Olive Oil

Frozen Spinach 

1 pound of fresh mushrooms

1 gallon of Half and Half

Regular Milk ( use as much as you wish)

Lots of butter!

Red Potatoes, cut into bite sized pieces

 Cook sausage, Mushrooms  and potatoes until done. 

Add frozen spinach until cooked through.

Drain most of oil but not all!  You want the flavor of the sausage.

Add half and half, with whole milk until you have as much soup and you want. 

Add the butter and just let simmer for a few minutes.

If you wish take some Crustini ( an Italian bread) brush with olive oil then take a clove of fresh garlic and rub over the bread and bake until crust is crunchy.

Serve with the soup.

You can tell I don't really measure things.  You don't need to either when you make this.

I love sausage. But I hate mushrooms. I can not have spicy foods due to my acid reflux but I am sure others would love the soup.

Then forgo the spicy sausage and leave out the mushrooms.  Use the Sweet Italian sausage it will still be good.  I forgot, salt and pepper to taste.

 Cook sausage, Mushrooms  and potatoes until done.
