Has anyone ever encountered eating potato salad where it has large chunks of red potatoes with the skins still on? I am concerned that this will get trapped in my intestine and rot. I read online that it could be quite dangerous. I could use advice.

I make red potatoes with the skins on for mashed or roasted, same with russet potatoes, wash them first but the skin is just extra fiber for the body.

Yes, but they are hard to digest. A lot of fiber.

Potato skin is natural fiber. However, if you don't cotton to eating the skin, which is digestible, remember that the potato itself contains the potassium and vitamin C that is very good for you.

I've never tried using red potatoes to make potato salad but the skin has most of the nutrients. Unless potatoe skins have given you a problem before I wouldn't worry about it.
