Jicama is sort of like a turnip, but better.  It's the root of the plant that looks like a vine.  It looks sort of like a potato, has the consistency of a crispy pear, but tastes sweet like an apple.  I like it raw in a salad.

Jambalaya is a wonderful, spicy Creole Cajun dish very popular here in Louisiana.  It's thicker than soup.... more like a stew.  Most people make it with chicken, shrimp, and Andouille sausage. It's started with a rue.  Then you add celery, onion, and green pepper... jalapeño and cayenne... garlic, bay leaf, and thyme.... a little Cajun seasoning... then chicken stock, uncooked rice, crushed tomatoes, rice, okra, all the meats, a little salt and pepper... cover and let it cook slowly.  It will be thick, so you may have to add a little more chicken stock.   Serve warm... garnish with sliced green onion and a thin lemon slices.  Yum!

I love dill weed in a sour cream dip!  What else can you do with it?

Dark chocolate (one tiny piece) is my favorite last snack before bedtime!
