You are asking MY opinion.

Thought we were talking about the Apostle Paul's.

And more to the point, that of the Holy Spirit who

allowed Paul's opinion to be of canonical scripture.

As you rightfully stated, Adam knew perfectly well and what the consequences would be. Adam was not tempted as Eve was, he made a choice and it had to be based on something. The following is not a statement but just a thought that occurred to me:

Could it be: Adam loved Eve so much that he didn't want Eve to face the consequences and punishment alone? If so, it's apparent Adam chose Eve over God? 

Another thing that puzzles me? Their exact sin of disobeying God by eating of the tree of knowledge of good and evil; and their punishments? When they partook of the forbidden fruit, why all of a sudden were they ashamed of their genital's and hid them? What was to be ashamed of? Why not cover up the offending organ, their mouths? Why was childbirth [procreation, sexual in nature] a punishment on Eve? 

Any thoughts??

I honestly think he managed to blame both in one sentence.  He did refer to Eve.....  'the woman gave me and I did eat..."   by inserting "the woman YOU gave to be with me, gave me the fruit and i did eat.."   I really think he managed to kill two birds with one stone :)

It looks like there is "Eve made me do it"   AND  "If You hadn't given me this woman I wouldn't be in this situation"  involved in Adam's attempt at self-defense
