We know that Peter spoke Greek as did John.

We do? How?

And was this before or after they left Israel to preach the Gospel?

The level of Greek he used in writing his epistles was far beyond what one would have learned later in life. Galilee was a cross roads. My guess is many spoke multiple languages because they had to to do commerce.

That is true. Peter, James, John and Andrew were commercial fisherman and it makes sense that they would have had at least a conversational knowledge of Greek, if not better, as that was the international language of commerce in that day. Most of the known world spoke Greek for that reason.

If a everything Jesus did was recorded the world could not contain all the books. It is safe to say He spoke the language of His parents as His native tongue, and that He could speak any language He wanted, too, if He so chose, through the Spirit.
