Why do "most" Protestants not use the Sign of the Cross?

The cross represents death - not protection, not a blessing, not a charm, etc.

To me the cross represents sacrifice, love and new beginning. Symbols are all known to hold multiple meanings.

And this is the answer you are asking for. It is a symbol that means different things to different people. For many it is a sign of persecution, believe it or not.

Though every disciple should embrace the Cross, the symbolism of a cross is a bit too vague nowadays, imo. Don't all the rap stars also wear a cross?

So I prefer more generic symbols of faith or light; like a menorah or a small prayer box. I hope to start conversations, instead of being classified by a symbol that has so many meanings.
