I need the simplest way possible to save about 8 gallons of green tomatoes.. a gallon of them were large enough to ripen up but most are just about the size of golf to tennis balls.. What can I do with them to save them? It sure would have been nice for the cold weather to have stayed off for about a week longer... I cannot fry that many tomatoes and making pies out of them is what I will do with some but that leaves about 7 gallons to work with... The peppers I can easily chop and freeze... the corn we can eat..its fine.. HELP!!! (wasn't there an old sci fi movie about a monster tomato?) In July we had a large amount of green tomatoes that were fixing to be done in by the heat of summer so we had a lot of pie in July... But these plants were just the plants that kept on giving..and giving and giving...well..until now... so we are now going to have a lot of pie in November.. green tomato pizza ? but hopefully I will come up with a way to preserve them for future use.. I chopped up the peppers and froze them.. They come in handy in all kinds of recipes... ..
