Because it says they are already on the MORROW and they are now saying let us make him drink wine this night also. Num 11:32 And the people stood up all that day, and all that night, and all the next day, and they gathered the quails: he that gathered least gathered ten homers: and they spread them all abroad for themselves round about the camp. It is important to understand that otherwise, trying to figure out time related events in the scriptures become difficult. Such as passion week, etc.. No, the sabbath day begins at sunset because ancient Israel operated off of a lunar calendar and on a lunar calendar days began in the evening and went to the following evening.
