Study: No-Fat, Low-Fat Dressings Don't Get Most Nutrients out of Salads

ScienceDaily (June 19, 2012)

The vegetables in salads are chock-full of important vitamins and nutrients, but you won't get much benefit without the right type and amount of salad dressing, a Purdue University study shows.

<snip>

"If you want to utilize more from your fruits and vegetables, you have to pair them correctly with fat-based dressings," said Mario Ferruzzi, the study's lead author and a Purdue associate professor of food science. "If you have a salad with a fat-free dressing, there is a reduction in calories, but you lose some of the benefits of the vegetables."

Im no longer going to feel guilty for using a lot of bleu cheese dressing on my salads. Or for any olive oil based vinaigrette dressings.

I love my fats----------olive oil, coconut oil, hummes made with lots of tahini and olive oil ,advocado and you name it!

Salade is easier to digest and takes more nutrients out the salade with added fat...(?) :)

truth is, anything marked low fat or "lite" is ALWAYS less nutritious than the full fat counterpart. fats are an important part of our diet.... and they're important for mental acuity... they keep our brain healthy. there are good fats and bad fats, of course, but as a general rule of thumb, you should never go "lite".

To make things lite, they replace fats with corn syrup usually. I think corn syrup is far more damaging.

As for bleu cheese, one either likes it or hates it. I have also had a gorgonzola cheese dressing that is great. More of a bite to it.

I hate blue cheese, I use olive oil based vinaigrette dressings....which I was told was bad by the VA doctor today. Spent over and hour getting rimmed out because my blood sugar levels are to high, as well as everything else. The appointment was scheduled for only 15 minutes...I complained that they were making me late for the all you can eat pancakes at I Hops. Some people have no sense of humor!

Why did he say olive oil is bad? When I was making tabouli a lot, and going through a lot of olive oil, I had a cholesterol well below 200. It is a healthy oil to use.

I am thinking, based on what he said, that the vinagrette has sugar in it.
