If God hated tattoos then, why does he suddenly approve? Under the new covenant, God's laws are in our heart.  God didn't change.  Tattoos defile us.  It is like placing graffiti on the temple of the Holy Ghost.

In doing a bit of checking, this is what I came up with. 

The 613 mitzvot have been divided into three general categories: mishpatim; edot; and chukim. Mishpatim ("laws") include commandments that are deemed to be self evident. such as not to murder and not to steal. Edot ("testimonies") commemorate important events of Jewish history. 

There's more out there if you do a little deeper digging.

The thing is, some laws were about the Levitical priesthood to take us from Moses to Calvary.  Some were laws to show Israel a separate people from the idol worshipping gentile nations.  They don't apply today, but laws based on God's standard of holiness do matter.
