Actually, you don't see sound. What you see is when the sound barrier is broken there is a formation of a donut-shaped cloud around the back end of the airplane.

so is 741mph is the same as 343 m/s?

so what sound is the plane travelling against? that it produces or just passing the equivalence of the speed of sound in air? i would love to see an illustration of the breaking of barriers and whatever in more detail.

That picture that Neb posted is not of the actual sonic boom, but rather from the expansion wave causing the pressure inside the expansion wave to drop causing water droplets to form until they re-collapse after the wave has passed. This effect can happen even at sub-sonic speeds.

The expansion waves in the video are cause by the intersection of the canopy bubble and wings of the aicraft intesections.

While condensation is indicative of expanded air and not necessarily supersonic flow, the condensation regions in this photo have a very conical leading edge with a uniform angle indicating that condensation was achieved as the expansion waves were accelerating the flow past about Mach 1.2 (the Mach number is equal to 1 divided by the sine of the cone half-angle relative to the axis of travel, ~50-60 degrees) locally in the condensation region.

The F-14 was actually flying at transonic speeds. (Around Mach 1)
