There is a huge misunderstanding of how the DNA testing works and what it works towards knowing.

One purpose is to understand your ethnicity mix. But the markers trace back thousands of years. Thus everyone will have a mix of ethnic genes to some degree. While some ethnicities like Irish can be pinpointed, other ethnicities like German cannot (considering the changing political borders and migrations of the people, there's too much ancient ethnic mix between the now-Germans and the nations around them.

It also needs to be kept in mind that the recognizing and interpretation of the genetic markers are only as good as their population sample. For instance, tracing Native American genetic markers is pretty much impossible at this point because they do not have enough sample population to determine what marker or markers are distinctive to particular tribes. Remember that "Native Americans" have roots originating from other parts of the globe, and there probably aren't any "pureblood" Natives left to sample from.

Another purpose is to make connections with living people. If you take a genetic test through Ancestry.com, they can determine who you are related to, and if you have a Tree going, from which ancestor you are both connected to. If you have a Tree going, it is a great way to confirm that you got your Tree correct (or at least that part of it)! Personally, I was contacted by a few distant cousins looking for help with their Trees - we were descended from a common ancestor, but they didn't know how to trace up to that ancestor. It was good to be able to help them connect the dots! There's been some other blessings that were more personal. So, it's not all hogwash!

Now Ancestry only tests autosomal DNA. Family Finder will also test the Y-DNA, X-DNA, and mitochondrial DNA. The Y-DNA will trace your surname line, if you are a male. The mitochondrial DNA will trace your maternal lines (your mother's mother's mother's mother's . . . ). These DNA tests are better for pinpointing certain ancestors to a degree. But again, there is a reliance on what sample population they have to draw from to make connections with.

As far as privacy, these companies have very, very strict privacy standards.

Something I forgot to mention - 

Ethnic DNA undergoes the same meiosis process that all your parents' reproductive cells went through. What that means is that their genes were split in half and then underwent a recombination to form the final sperm and ovum cells. Thus, if your father was say 50% Spanish, you are not guaranteed to end up 25% Spanish - you could end up with maybe only 10% of those genes. Or you could end up with 40% of them. Siblings who take the test have found to have a different percentage of ethnic  markers from each other, and some siblings don't have the ethnicity that the other siblings have. It's kind of funny how that works!
