There are beliefs which pretty much all individual Christians, ministries, churches, and denominations hold to as being important. For example, Jesus Christ's atoning work is the sole way of salvation. Disagreement with these essential Christian beliefs is considered heresy by the vast majority of Christians. Then there are the non-essential beliefs that Christians disagree about and argue over between themselves. Some Christians will call each other heretics over these disagreements. Depending on what Christian, ministry, church, or denomination you listen to, the list of things which are heresies will be different. There will be common things they all agree are heresies. For example, saying Jesus is only one way of salvation among many. However, there are some issues Christians have been debating for centuries and calling each other heretics over such as the calvinism/arminianism controversy. In summation of what has been said, a heresy is someone's opinion that can't be proved without using Scripture out of it's intended context, or the acid test is, ...whatever opinion someone is promoting will always make Jesus a liar as to what He has said in His Word.
