8 large carrots peeled and chopped
4 dates, pitted and chopped
2 tablespoons melted coconut oil or butter (coconut oil tastes 10x better)
Sea salt to taste
Cinnamon to taste (not necessary)
Preheat oven to 350-375 degrees
Place carrots and dates into an oven safe dish, and top with butter or oil. Toss to coat and sprinkle with sea salt and cinnamon to taste.
Bake 20-30 minutes until carrots are tender.
