No Bake Fruit Cake Balls

A new twist on that fruit cake stuff...but these tasty balls go fast! Made them for church potluck and they were gone in less than an hour...and I made 5 dozen!

1/2 cup butter
1/2 cup honey
1 cup finely chopped mixed candied fruit
1 cup raisins
1 cup finely chopped pecans
1 tsp orange extract
1 tsp vanilla extract
1/2 tsp salt
1/2 tsp each of: cinnamon, allspice, nutmeg
dash of ground cloves
3 1/2 finely chopped honey graham cracker crumbs

In a large bowl cream the butter and honey til light and fluffy. Add everything else except the graham cracker crumbs. Set aside for about an hour. Next, add the graham cracker crumbs and mix very well...will get to the consistancy of wet chunky sand. Form into small bite size balls. You can roll in powder sugar, granulated sugars, or drizzle with a royal glaze if desired. Store these in a tightly covered container in the fridge each layer seperated by wax paper. This makes about 4-5 dozen depending on size of balls you make.

I used a mellon baller to make things go faster...and worked great. These are very sweet and rich...so small balls work better. Also, the longer they sit in the fridge, the better they become!
